Chocolate Lasagna

This is a family favorite with a layer of that special center you find in a Dairy Queen ice cream cake!

1 package regular Oreo Cookies - about 36
6 TBSP butter, melted
1 - 8 ounce cream cheese, softened
1/4 cup sugar
2 TBSP milk
2 - 8 ounce tubs Cool Whip
2 - 3.9 ounce Chocolate Instant Pudding
3 and 1/4 cups cold milk
1 and 1/2 cups mini chocolate chips

Ginger-Cinnamon Apple Crisp

  • Makes: 8 servings
  • Prep 35 mins
  • Cool 20 mins to 30 mins
  • Bake 55 mins to 1 hr
  • ingredients
  • Nonstick cooking spray
  • 3/4 cup packed dark brown sugar
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • teaspoon ground cinnamon
  • Dash salt
  • tablespoons unsalted butter, cut into pieces
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans
  • 1/2 cup packed dark brown sugar
  • 1/4 cup Clabber Girl Cornstarch or cornstarch
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • pounds Granny Smith apples, peeled, cored and thinly sliced (about 8 cups)
  • Vanilla ice cream or whipped cream (optional)

directions

  1. Lightly coat a 2-1/2- to 3-quart (13x9-inch) baking dish with nonstick cooking spray and wipe with a paper towel to spread evenly; set aside.
  2. For topping: In a large bowl, whisk together the 3/4 cup brown sugar, flour, the 1-1/2 teaspoons ginger, the 1 teaspoon cinnamon and salt. Using a pastry blender, cut in butter until the mixture resembles coarse crumbs. Stir in walnuts and pecans; set aside.
  3. In a very large bowl, whisk together the 1/2 cup brown sugar, cornstarch, the 3/4 teaspoon ginger and the 1/2 teaspoon cinnamon. Add apples slices. Gently toss until coated.
  4. Transfer apple mixture to prepared dish. Sprinkle topping over the apples. Cover the dish with foil.
  5. Bake in a 375 degree F oven for 30 minutes. Remove the foil and bake for 25 to 30 minutes more or until top is browned and apples are tender. Let cool for 20 to 30 minutes before serving. If you like, serve with ice cream or whipped cream. Makes 8 servings.

Fritter Batter


1 egg
2/3 cup milk
1 tbsp Crisco, melted
1 cup flour
2 tbsp sugar
1 tsp baking powder
1/4 tsp salt

Apple fritters. Core and thinly slice apples. Dip in batter, fry in skillet of hot crisco.
Corn fritter. Use less milk. Add  can of creamed corn to batter. Fry in crisco.

Apple and Pear Crisp

When I tasted this crisp I almost cried. It had a beautiful blend of pear and apple and the lemon gave it this freshness I had never experienced in food before. I took a dish to Dad before it cooled off.

4 pears, peel, core and cut into chunks
6 apples, peel, core and cut into chunks
1 orange (1 tsp zest and 2 Tbsp juice
1 lemon (1 tsp zest and 2 Tbsp juice
½ cup sugar
¼ cup flour
1 tsp cinnamon
½ tsp ground nutmeg

Topping:
1 ½ cup flour
¾ cup sugar
¾ cup light brown sugar, packed
½ tsp salt
1 cup old fashioned oatmeal
2 sticks cold butter, diced

Place cut fruit in large bowl, add zest and juice, sugar, flour, cinnamon, and nutmeg. Pour into 9x13 baking dish.

Topping: Combine all ingredients in bowl, using electric mixer until mixture becomes large crumbs. Sprinkle evenly and completely over fruit.

Bake at 350 for 50 – 60 minutes, until top is brown and fruit is bubbly. Serve warm.

Fruit Crisp

Cherry Crisp
1 cup quick oats
1 cup flour
1 cup brown sugar
1 stick margarine
1 can fruit pie filling

Mix oats, flour and brown sugar in bowl.  Melt margarine and add to the mixture.  Use half of this mixture to press in bottom of glass pan.
Pour pie filling over oats.  Top with remaining oat mixture.  Bake at 350° for 35-45 minutes.

Banana Layered Dessert

1 cup flour
1 stick margarine, softened
1/2 cup chopped nuts
Mix and press into 9 x 13 glass dish at 350 for 20 minutes.
Cool completely.  Layer with banana slices.

8 oz cream cheese
1 cup powdered sugar
1 cup cool whip
Mix together.  Spread on top of bananas.

2 packs instant vanilla pudding
3 cups milk
Mix until set.  Spread on next layer.
Top with remainder of Cool Whip.  Sprinkle chopped nuts.
