Unstuffed Cabbage Roll

I saw this idea on Facebook last week and couldn't wait to try this concept with my own Cabbage Roll recipe. It was so easy to throw together!

Ingredients:
1 to 1-1/2 lbs. Ground beef
1 large onion, chopped
1/4 tsp garlic, minced
1/4 tsp oregano
24 oz tomato sauce
2 - 14-15 oz cans diced tomato
1/2 cup water
1/3 cup lemon juice
1- 1/2 tsp salt
1/4 tsp fresh ground pepper
1/4 cup brown sugar
1 cup rice, uncooked (I used Minute Rice)
1 small or 1/2 of a large head of cabbage, chopped in large bite-sized pieces

In a large pan brown ground beef with onion. Drain. Add the remaining  ingredients. Bring to a boil then simmer for 30 - 45 minutes or until cabbage is tender. Sprinkle with love before serving!

Lasagna Made Simple

Katie made Lasagna for Father's Day. This is a favorite recipe that Richard has perfected over the years. It's  even more delicious when you begin with a frozen bag of our Almost Homemade Spaghetti Sauce.

1 - 24 ounce jar spaghetti sauce
1 pound ground beef
1 4 ounce jar sliced mushrooms
2 eggs
1-1/2 cups cottage cheese
2 Tbsp. parsley flakes
12 ounces mozzarella cheese
12 frozen Italian meatballs
3 Tbsp. Love

Brown ground beef; drain. Add spaghetti sauce and mushrooms; heat.
Stir eggs, cottage cheese and parsley in a bowls.
In a 13 x 9 inch glass dish place 3 uncooked noodles; spread 1 cup sauce, then half of egg mixture, some mozzarella cheese and 1 Tbsp of love.


 Second layer: noodles, 1 cup sauce, remaining egg mixture, some mozzarella cheese, more love.

 Third layer: noodles, 12 frozen Italian meatballs, remaining sauce, mozzarella cheese, and love.

 Pour 3/4 cup of HOT water in the 4 corners of dish. 

Cover with foil. Bake at 375 for 1-1/2 hours or until pasta is tender when tested with a fork.

Corn Casserole

This is a great side dish with Oven Chicken Fajita and Almost Homemade Spanish Rice!

1 can creamed corn
1 box Jiffy corn bread mix
3 tsp brown sugar
1 egg
1/3 cup milk
1/4 cup green pepper, diced
1/4 cup onion, diced
2 TBSP butter
1/2 cup cheddar cheese

Saute green pepper and onion in butter.  Mix corn bread mix with milk and egg.  Add onions and cheese.  Combine. Prepare casserole dish with Pam. Bake at 400 for 30 - 35 minutes. 

Easy Cheesy Potatoes

Another family favorite!

1- 1/2  bags frozen hash browns, thawed (approx 48 ounces)
2 TBSP butter
1 can cream of chicken soup
1 cup sour cream
1 small onion, diced
2 cups shredded cheddar cheese or mix cheddar and Monterey Jack
sprinkle with love

Saute' onions in butter.  Mix all ingredients together.  Bake uncovered in 13 x 9 dish at 350 for 45 - 60 minutes. Check with fork and continue baking if potatoes are not completely tender.

Homemade Macaroni & Cheese



2 cups uncooked macaroni

1 TBSP onion, finely chopped (optional)
¼ cup butter, melted
¼ cup flour
2 cup milk
2 cup cheddar cheese, grated

Make White Sauce with butter, flour and milk, add cheese, stir until melted. Make sure white sauce is thin by adding a little more milk. Cook macaroni, drain then add all ingredients in 9 x 13 casserole, use Pam spray. Bake at 325˚ for 35 - 45 minutes.

Ham & Potato Casserole

6 - 8 potatoes
1 large onion
4 - 6 ham slices
1/4 cup butter
1/4 cup flour
1 1/2 cup milk
salt, pepper

Peel 6 - 8 potatoes, slice. cut onion into several wedges. Spray Pam in large glass baking dish.  Layer 1/2 of potatoes, 1/2 of the flour, 1/2 of the onions and a layer of ham. Then repeat with remaining ingredients. Add milk, slices of butter, salt and pepper. Cover and bake at 375˚ for 1 ½  hours.  You could also cut ham into cubes and toss ingredients before baking.

Spinach Noodle Casserole

Beautiful green noodles
cooked in chicken broth
2 large cans tuna or chicken
½ stick butter
1 cup red pepper, diced
1 cup celery, diced
1 cup onion, diced
8 oz cheddar cheese, grated
6 oz jar olives, sliced
1 small can mushrooms
2 – 6 oz bags spinach noodles
4 cups chicken broth
1 can cream of mushroom soup

Sauté’ diced vegetables in butter.  Cook noodles in chicken broth until done. Reserve  about 1 cup of broth when draining.  Add all ingredients together in large bowl, mix gently. Add some reserved broth if it seems dry.
Bake at 350˚ for 40 - 50 minutes or until hot through center.
